On New Year’s Eve, The Katharine will feature a Five-Course Tasting Menu for $105 in the dining room. The meal will begin with an amuse-bouche comprised of a North Carolina Oyster with caviar, winter citrus, Aleppo pepper, and dill. The second course includes a choice of Velouté de Celeri (creamy celeriac soup, poached shrimp, and chervil) or Poitrine de Porc (crispy pork belly, delicata squash, hazelnut, and persimmon vinaigrette).
The third and main course will feature a selection of Rotisserie de Boeuf (braised short rib, butternut-potato puree, brussels sprouts, and crispy shallots) or Saumon Grillé (grilled king salmon, Harmony Ridge Farms broccoli, parsnip puree, saffron, and persillade). Following the main course, the fourth course will be Goat Lady Dairy Chevre Mousse with fig jam and rosemary shortbread.
The special New Year’s Eve dessert features a choice of Cranberry Pain Perdue (croissant bread pudding, pecan crumble, local apple compote, and Chantilly cream) or Pot de Crème (dark chocolate custard, dried blueberry meringue, and juniper cookie).
