Noodle Ju’b, a neighborhood ramen counter built around house-made noodles and slow-simmered broths, has opened in Salem Bottleworks, the restored 1929 Coca-Cola Plant near Old Salem. Operated by James Beard-nominated duo John and Lucia Bobby, the quick-service spot makes all of its ramen and soba noodles in house and prepares broths from scratch.


It's currently open 11 a.m. to 5 p.m. Tuesday through Saturday and plans to offer beer, wine, liquor, and sake. There's more to come at Salem Bottleworks, with two additional Bobby-led concepts in the works: a retail shop and a fine-dining restaurant, both opening in 2026.
